Chocolate Protein Pancakes

Super high protein, quick to make, full of chocolatey flavour, high in vitamins and minerals, perfect for blood sugar balance.
Serves 6 | Low-gluten | Refined sugar-free
Ingredients:
- 2 organic eggs
- 1 banana
- 1 and ½ cup rolled oats (or quinoa flakes to be completely gluten-free)
- 1 tsp baking powder
- ¼ tsp salt
- ⅓ cup almond milk
- 2 heaped tbsp Swiss Chocolate Supergut Protein
- 1 tbsp organic cocao powder
- 1 tsp maple syrup
- 1 heaped tsp hemp seeds
- Olive oil, ghee or butter to cook the pancakes.
- Fresh fruit of choice and yoghurt to top
Method:
- To a high-speed blender, add all the ingredients and blend until smooth and creamy. If not smooth enough, add tablespoons of milk as needed.
- Using a medium sized pan on medium-high heat, start to cook the pancakes with about ¼ cup batter per pancake. Cook for approximately 2 minutes on each side. Repeat until all the batter is finished.
- Top with your favourite fruit, Greek yoghurt and hemp seeds. Dig in and enjoy!
Notes:
- These pancakes last in the fridge for up to a week in an airtight container.
