Serves 1 | Refined sugar-free
Ingredients for the oats:
- ⅓ cup organic rolled oats
- 2 tsp chia seeds
- 1 tsp hemp seeds
- 1 tsp flax meal
- 2 tsp cacao powder
- 2 heaped tsp Collagen Restore
- 180ml milk of choice
- Dash of maple syrup
- Sprinkle of salt
Ingredients for the cherry coulis:
- ¼ cup halved and de-pitted fresh cherries
- 2 tsp maple syrup
- Squeeze of lemon
Method:
- To a small jar, add all of your ingredients for the overnight oats. Mix well to combine.
- Cover and set the oats in the fridge for a minimum of an hour.
- While the oats are setting, start on the cherry coulis. Simply add the ingredients to a small saucepan over medium heat and continue to stir until the cherries are softened slightly.
- Press the cherries slightly to release more juices and continue to stir for a further two minutes.
- Take the coulis off the heat and allow to cool completely.
- Once the overnight oats are set (should be thickened at this point), place the cherry coulis on top.
- Feel free to top with a dollop of Greek yoghurt, extra fresh cherries and a grating of organic dark chocolate. Dig in and enjoy!
