Protein bars are the Swiss Army Knife of snacks - small, portable, napkin free eats that can take care of growly stomachs.

The trouble is, most protein bars suck! They're full of FODMAPs, artificial additives, and difficult to digest ingredients.

These collagen oatmeal bars are made with a short list of nutritious ingredients and our favourite "pro-gut protein," Collagen. Collagen Restore™ has zero taste and is a simple way to both improve your protein intake, and give your gut a powerful healing boost on your way up to better health.

Ingredients / Serves 4

  • 1/2 cup / 150g mashed banana
  • 2 egg whites
  • 1/4 cup peanut or macadamia butter
  • 1/2 cup water
  • 2 tsp vanilla extract
  • 1 1/4 cups rolled oats
  • 1/4 cup Vanilla Supergut Protein
  • 2 tbsp Collagen Restore
  • 2 tbsp maple syrup, optional
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt

Method

  1. Preheat your oven to 180°C / 350°F and line a 10 x 20 cm / 4 x 8 inch loaf tin with baking paper.
  2. Beat the mashed banana and egg whites together in a large mixing bowl with a fork. Beat in the peanut butter, water and vanilla.
  3. Add the rolled oats, Hero Protein powder, Perfectly Pure Collagen baking powder, cinnamon and salt. Fold everything together until well combined.
  4. Tip the mixture into the lined loaf tin, smoothing out the top with the back of a spoon. Bake in the preheated oven for 30 minutes or until lightly browned around the edges and a skewer inserted into the middle of the loaf comes out clean.
  5. Transfer the loaf to a wire rack to cool. Once cool, slice the loaf into bars with a serrated knife.
