Blood Sugar Balancing Macadamia + Cranberry Protein Balls

Prebiotics like Solnul® improve blood sugar balance, slow digestion (reducing hunger for longer) and helps to increase the hormone GLP-1, which helps to lower appetite and maintain blood sugar.

Makes 8 large or 16 small protein balls | Gluten-free | Refined sugar-free

Ingredients:

  • 1 cup raw macadamias
  • 1⁄2 cup unsweetened dried cranberries
  • 1 tsp flax meal
  • 5 medjool dates
  • 3 tsp almond butter
  • 2 heaped tbsp Vanilla Supergut Protein
  • 1⁄4 cup organic white chocolate
  • 1 tsp virgin coconut oil


Method:

  1. To a high speed blender or food processor, add the raw macadamias and blend for
    about 30 seconds or until finely ground. Be sure not to overmix as we do not want a nut butter!
  2. Add in the remaining ingredients (minus the white chocolate and coconut oil), and blend until all incorporated. You will know it’s finished when you can easily form a small ball
    with your hands.
  3. Using damp hands, form 8 or 16 balls and place onto a lined baking tray or plate. Set
    aside in the fridge.
  4. Add the chocolate and coconut oil to a small microwave safe bowl and melt in 30 second
    increments (be sure not to burn the chocolate!).
  5. Once melted, drizzle the chocolate over each ball and set in the fridge for a further 5 minutes.


Notes:

These balls can last in an airtight container in the fridge for up to a week.
