Blood Sugar Balancing Macadamia + Cranberry Protein Balls

Makes 8 large or 16 small protein balls | Gluten-free | Refined sugar-free
Ingredients:
- 1 cup raw macadamias
- 1⁄2 cup unsweetened dried cranberries
- 1 tsp flax meal
- 5 medjool dates
- 3 tsp almond butter
- 2 heaped tbsp Vanilla Supergut Protein
- 1⁄4 cup organic white chocolate
- 1 tsp virgin coconut oil
Method:
- To a high speed blender or food processor, add the raw macadamias and blend for
about 30 seconds or until finely ground. Be sure not to overmix as we do not want a nut butter! - Add in the remaining ingredients (minus the white chocolate and coconut oil), and blend until all incorporated. You will know it’s finished when you can easily form a small ball
with your hands. - Using damp hands, form 8 or 16 balls and place onto a lined baking tray or plate. Set
aside in the fridge. - Add the chocolate and coconut oil to a small microwave safe bowl and melt in 30 second
increments (be sure not to burn the chocolate!). - Once melted, drizzle the chocolate over each ball and set in the fridge for a further 5 minutes.
Notes:
These balls can last in an airtight container in the fridge for up to a week.
