Caramel Pecan Gut-Healthy Collagen Oats

Treat yourself to indulgent Caramel Maple Pecan Overnight Oats! Made with Collagen Restore, this nourishing breakfast contains skin and gut-loving nutrients, fibre, and plant-based omega-3s from chia seeds, hemp seeds, and flax meal. A hint of cinnamon adds warm, blood sugar-balancing goodness, while the pecan maple caramel topping takes it to the next level of deliciousness. Creamy, wholesome, and oh-so-decadent, it’s the perfect way to fuel your day while glowing from the inside out!

Serves 1 | Refined sugar-free 

Ingredients for the oats:

  • ⅓ cup organic rolled oats 
  • 1 tbsp chopped red apple
  • 1 tbsp chopped pecans 
  • 1 tsp chia seeds
  • 1 tsp hemp seeds
  • 2 tsp flax meal 
  • 1 tsp organic ground cinnamon 
  • 2 heaped tsp Collagen Restore 
  • 180ml milk of choice 
  • Dash of maple syrup 
  • 2 tsp pecan caramel 
  • Sprinkle of salt 

Ingredients for the pecan caramel:

  • 2 heaped tbsp pecan butter (you can make this by blending pecans on high-speed until the nut butter is formed. Alternatively, you can use any nut butter you have on hand). 
  • 2 tbsp maple syrup 
  • 1 tbsp melted MCT or regular coconut oil 

Method:

  1. To a small bowl, add all the pecan caramel ingredients and mix well to form a smooth consistency. If it is still too thick, add teaspoons of coconut oil to achieve your desired consistency. Set aside. 
  2. To a small jar, add all of your ingredients for the overnight oats. Mix well to combine. 
  3. Cover and set the oats in the fridge for a minimum of an hour. 
  4. Once the oats are set, add another swirl of pecan caramel on top. Feel free to add more diced apple, a dollop of Greek yoghurt and chopped pecans if desired. Dig in and enjoy! 

Notes:

  • These overnight oats last well in the fridge in an airtight jar or container for up to a week. 
  • For the left over pecan butter, simply store it in the cupboard in an airtight container or jar for up to two weeks.
