Gut boosting beetroot hummus

This recipe is full of antioxidants, immune and blood-boosting properties (thanks to the beetroot and garlic), packed with protein, fibre and calcium (thanks to the tahini, chickpeas and bone broth powder!), so easy to make - simply blend all the ingredients and enjoy!
Ingredients:
- 1 can organic chickpeas
- 3 small beetroots: cooked and peeled
- ⅓ cup hulled tahini
- 2 garlic cloves: slightly bruised
- ⅓ cup olive oil
- Salt and pepper to taste
- ½ tbsp ground cumin powder
- Juice of one lime
- 2 heaped tbsp Collagen Bone Broth powder
Method:
- To a high-speed blender or food processor, add all the ingredients. Blend until well combined and creamy. This may take a couple of minutes - so be patient!
- Once the consistency is to your liking, top with more olive oil, some dukkah and coriander if desired. Dig in and enjoy!
Notes:
- Best stored in an airtight container - can last up to a week in the fridge.
- If not blending well, add some ice cubes and a few extra tablespoons of olive oil as desired. This will make it creamier and come together easier.
