Hibiscus Gut-Loving Panna Cotta

Indulge in a creamy hibiscus berry panna cotta made with coconut milk and a hint of cinnamon for a delightful gut-loving dessert.   • 385ml of coconut milk (this is an important measurement!)
  • 2 tsp gelatin powder
  • 2 tsp Daily Gut Nutrition
  • 1 tbsp water
  • 1 tbsp organic dried hibiscus
  • ½ tsp vanilla
  • ½ tsp ceylon cinnamon powder (optional)
  • 1 tsp raw honey


Method:

  1. In a small sauce pan, over low-medium heat, add the coconut milk, Daily Gut Nutrition, cinnamon, vanilla and honey. Mix to combine.
  2. With the hibiscus in a tea strainer, gently set it inside the coconut milk mixture and leave to infuse for around 10 minutes.
  3. While waiting, to a small bowl, add the tablespoon of water and the two teaspoons of
    gelatin powder. Set aside to bloom.
  4. After 10 minutes, add the bloomed gelatin to the coconut milk mixture and mix until all dissolved.
  5. Transfer to two greased ramekins (I grease with olive oil) and set aside in the fridge to set for a minimum of 4 hours.
  6. After at least 4 hours, to release the panna cotta, run the ramekin under warm water for around 1 minute. Flip the panna cotta gently onto your serving plate. Repeat this step with the other panna cotta.
  7. Serve with some passionfruit pulp and fresh raspberries if desired. Dig in and enjoy!
