Collagen Apricot Crumble
Ingredients / 3-4 serve
- 500g apricots
- 125g blueberries, fresh or frozen
- 1 tsp coconut sugar, honey or maple syrup
- 1 lemon
- 50g butter
- 50g oats
- 50g almond flour
- 2 tbsp Perfectly Pure Collagen
- 1 tbsp coconut sugar, honey or maple syrup
Method
- Preheat the oven for 180°C / 375°F
- Cut apricots into quarters, mix with blueberries and sugar. Add the zest of the lemon, squeeze 1/2 tablespoon of juice, mix and pour the fruit into the prepared ramekins / cups.
- Melt the butter in a small pan. Add oats, almonds, collagen and sugar, mix until crumbly. Spread crumble on top of fruit.
- Bake for approx. 20 minutes. Remove and cool slightly.
