Enjoy the cozy flavours of Carrot Cake Overnight Oats, a nourishing breakfast with a decadent twist! Made with Collagen Restore, this recipe contains skin-loving nutrients, fibre, and plant-based omega-3s from chia seeds and flax meal. Serves 1 | Refined sugar-free 

Ingredients:

  • ¼ cup + 1 tbsp organic rolled oats
  • 1 tbsp chopped pecans or walnuts 
  • 1 tsp chia seeds
  • 2 tsp flax meal 
  • 1 tsp cinnamon 
  • ¼ tsp nutmeg 
  • 2 heaped tsp Collagen Restore 
  • 150ml milk of choice 
  • 1 tbsp Greek yoghurt 
  • Dash of maple syrup 
  • 1 tbsp grated carrot 

Method:

  1. To a small jar, glass or container add the oats, chopped nuts, chia seeds, flax meal, cinnamon, nutmeg and collagen restore. Mix to combine. 
  2. Then, add the milk, Greek yogurt, maple syrup, and carrot. Mix again, ensuring there are no clumps of the dry ingredients. 
  3. Cover and set in the fridge for a minimum of one hour. 
  4. Once set, enjoy as is or feel free to add an extra dollop of greek yoghurt, a sprinkle of cinnamon and chopped nuts.

  • These overnight oats last for up to a week in an airtight container or jar in the frid
