Gluten-free Strawberry Cheesecake Doughnuts

Satisfy your sweet tooth with these guilt-free, gut-loving strawberry cheesecake doughnuts! Ingredients:

Method:

  1. Preheat your oven to 180 degrees Celsius (fan-forced) and spray/grease a doughnut mould tray. Set aside. 
  2. To a small bowl, add your eggs, coconut oil and honey or maple syrup. Whisk to combine. 
  3. Add in the almond meal, protein, baking powder and salt. Fold through until just combined (be sure not to overmix as this will cause a ‘gummy’ like texture). 
  4. Add approx. two tablespoons of batter per doughnut mould. Bake for 12-16 minutes or until puffed up and slightly golden. 
  5. Leave to cool for 2 minutes in the mould and then transfer to a wire cooling rack for a further 5 minutes. 
  6. While the doughnuts are cooling, make the coating by melting together the white chocolate and coconut oil either in the microwave or over a double boiler on the stovetop. 
  7. Stir through half of the crushed freeze-dried strawberries and the teaspoon of protein. 
  8. Dip the cooled doughnuts into the white chocolate coating, being sure to coat the entire top. Then sprinkle the remaining freeze-dried strawberries on top before they completely cool. Dig in and enjoy!
