Summer Mangoes & Cream Aussie Gelatin Jellies

These tangy gut lovin' jellies are so easy to make, contain only a handful of ingredients and use the gut-healing superstar, gelatin (it's a close cousin of collagen).

Ingredients

Mango Layer
  • 2 tbsp Good Gut Gelatin
  • 4 tbsp water
  • 2 cups mangoes, frozen or fresh
  • 1 cup water
  • 3 tbsp honey or maple syrup
  • Pinch of salt

Cream Layer

  • 1 tbsp Good Gut Gelatin
  • 2 tbsp water
  • 1/2 cup cream (sub for dairy free: coconut cream)
  • 2 tbsp honey or maple syrup

Method

  • In a small dish, mix 2 tbsp of Good Gut Gelatin with 4 tbsp water & let sit to bloom for 10 minutes. 
  • Add mangoes, water & honey into a medium sized saucepan & bring to a simmer. Gently mash mangoes with a fork or use a blender.
  • Add in bloomed gelatin and stir until dissolved. 
  • Pour mixture into a shallow dish and let cool. 
  • In a small dish, mix 1 tbsp of Good Gut Gelatin with 2 tbsp of water & let sit to bloom for 10 minutes.
  • Add cream & honey into a small saucepan & bring to a simmer. 
  • Add in bloomed gelatin and stir until dissolved. 
  • Pour onto mango mixture. 
  • Cover and place in the fridge until set or overnight.
  • Enjoy.
