Healthy Gut Parmesan Scrambled Eggs

Breakfast that's gut healing and highly nutritious doesn't have to take a lot of time. Here's our favourite quick yet highly nutritious meal that will help you on your gut health journey - and that won't make you late for the bus. 

Parmesan is a real superfood - it tops the cheese charts as the highest source of calcium. An ounce of Parmesan (roughly the size of your thumb) delivers a solid dose of protein and a whopping 40 percent of your daily value of bone-building calcium. It's also naturally low in lactose. 

Eggs are among the most nutritious foods on the planet. Eggs are loaded with vitamins, minerals, high-quality protein and good fats.

Properly fermented sourdough bread acts as a prebiotic, which means that the fiber in the bread helps feed the "good" bacteria in your intestines.

Healthy Gut Parmesan Scrambled Eggs breakfast with collagen coffee 

Ingredients / 1 Serve
  • 1 tsp butter or ghee
  • 2 large eggs
  • Parmesan cheese, grated
  • 1 piece of sourdough toast
  • Salt, to taste
For serving


  1. Heat fat on medium in a small pan.
  2. Lightly whisk eggs, salt, and parmesan together.
  3. Pour into hot pan and stir gently, bringing the outer cooked egg into the centre.
  4. Cook 2-3 minutes or until just set.
  5. Serve on sourdough toast + with collagen coffee (coffee, milk + scoop of collagen).
