This warming soup is nourishing, flavour packed and full of gut supporting collagen and antimicrobial sage and rosemary. You'll have it on repeat, for sure.
Ingredients (serves 4-6)
- 1 tablespoon ghee or butter
- 1 large diced onion
- Handful of bacon, chopped
- 5 cups diced potatoes
- 3 cups carrots, diced
- 2 tsp each sage, rosemary, garlic powder
- 1/2 tsp paprika
- 4 tsp salt
- 4 cups bone broth
- 4 tbsp Perfectly Pure Collagen
- 1.5 cups coconut milk (sub for 1 cup milk and 1/2 cup cream)
Ingredients
- Add ghee, diced onion, and chopped bacon to a large pot and cook, stirring occasionally, until onion is caramelized (about 10 mins.)
- Stir in diced potatoes and carrots and cook for another 5 minutes.
- Add seasons, bone broth and collagen.
- Cover and simmer on the stove for 25 minutes or until potatoes are fork-tender.
- Stir in coconut milk and serve.
Optional: dice two large raw chicken breasts and add them with the potatoes.
