    High-Protein Blueberry
    Oat Bars

    Bursting with blueberries and full of protein, these Blueberry Oat Bars contain Supergut Protein, a special kind of protein designed to to hit your appetite's off switch and keep you full for hours.

    Refined sugar-free | Serves 8 

    Ingredients:

    • 1 cup rolled organic oats 
    • 1 cup almond meal 
    • 2 heaped tbsp French Vanilla Supergut Protein 
    • 1 tsp cinnamon 
    • 3 tbsp nut butter of choice (we used tahini and almond) 
    • ⅓ cup pure maple syrup 
    • 3 tbsp melted coconut oil or organic unsalted butter 
    • 1 cup frozen organic blueberries 
    • ¼ cup water 
    • 1 tsp tapioca flour

    Method:

    1. On the stove top, over low-medium heat, add the blueberries and water. Mix to combine and leave to simmer for 10 minutes or until the blueberries are softened. 
    2. Mix in the tapioca flour to thicken and take off the heat. Leave to cool while completing the next steps. 
    3. To a small bowl, add all the remaining ingredients and mix well to combine. The mixture should be resembling a well-formed crumble. 
    4. To a lined loaf or brownie tin, add ¾ of the oat mixture to the bottom. Firmly pressing to pack evenly. 
    5. Add the blueberry mixture on top, along with the rest of the crumble mixture, and set in the fridge for 30 minutes to an hour. 
    6. Once set, slice into your desired amount of bars.

    Notes:

    These can last well in an airtight container in the fridge for up to 4 days.
