White button mushrooms have a hormone-balancing secret.
Mushrooms from the Agaricus bisporus family (white button, portobello, cremini, and champignons) are extraordinarily nutritional tools with powerful hormonal benefits.
Studies show these mushrooms:
- reduce oestrogen (by inhibiting the enzyme that converts testosterone into oestrogen)
- absorb gut toxins
- stimulate immune function + reduce inflammation
- protect the liver + kidneys (once toxins are removed).
Several landmark studies have also shown the clear benefit of white button mushrooms as a potential breast cancer chemopreventive agent.
They contain two toxic chemicals however (hydrazine and agaritine), so cooking for 1 - 3 hours remove almost all traces of toxins making them safe to eat in therapeutic quantities (70-100gs).
White button mushroom soup is by no means a panacea, however using it once or twice a week, in conjunction with a gut-cleansing daily carrot salad help set better conditions in your gut and will help you feel better.
Here's the recipe to make your own:
Ingredients
- 1kg white button mushrooms
- 1 litre of water
- 500ml of good quality beef or chicken broth
- Small handful each of thyme and parsley
- 1-2 tsp salt
- 3-4 tbsp Collagen Restore™
Method
- Chop your mushrooms into small pieces or blend the mushrooms in water in a blender for a smoother consistency
- In a large pot, bring all ingredients to the boil and reduce heat to medium
- Simmer for 2-3 hours.
- Serve with buttered sourdough and parmesan.
