Infused with warm cinnamon, nutmeg, and a touch of holiday magic, this crunchy granola is the perfect way to spread Christmas cheer. Ingredients
- 2 cups organic rolled oats
- ¾ cup chopped nuts (I used a mixture of brazil nuts, hazelnuts and almonds)
- ⅓ cup buckwheat kernels
- ¼ cup Supergut Swiss Chocolate Protein
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- ¼ cup olive oil or coconut oil
- ¼ cup honey
- ¼ cup dark chocolate chips
Method:
- Preheat your oven to 160 degrees Celsius and line a baking tray with baking paper. Set aside.
- To a large bowl, add all of the granola ingredients (besides the chocolate chips) and mix well to combine.
- Transfer the granola to the prepared baking tray and spread evenly.
- Bake for 10 - 15 minutes or until slightly golden (feel free to rotate the tray halfway to get an even browning).
- Leave to cool for 15 minutes (this is important to get the clusters of granola and not just a muesli consistency!).
- Sprinkle on the chocolate chips and mix through well.
- Transfer the granola to any jars, Tupperware or containers of choice!
Notes:
- This granola can last in the cupboard for up to a month if airtight in a glass container or tupperware.
