    Ingredients

    Base

    Caramel

    • 10 medjool dates

    • 65g peanut butter

    • 2 tbsp maple syrup

    • Water, to mix

    Topping

    • 1 block dark chocolate

    • 1 tsp olive oil

    • Freeze-dried strawberries, chopped
    Method
    1. Soak the dates
      Add the dates to a bowl, cover with boiling water, and set aside to soften while you make the base.

    2. Make the base
      Blend the cashews, shredded coconut, maple syrup, olive oil and Collagen Restore™ until well combined. Press firmly into a lined baking tin. Bake at 180°C for 12 minutes, or until golden. Remove and cool completely.

    3. Blend the caramel
      Drain the softened dates and add to a blender with the peanut butter and maple syrup. Add 2 tbsp of water and blend until smooth. If needed, add more water one tablespoon at a time until you reach a thick, spreadable caramel consistency.

    4. Layer and freeze
      Spread the caramel evenly over the cooled base and place in the freezer until firm.

    5. Melt the chocolate
      Melt the dark chocolate with 1 tsp olive oil until smooth and glossy.

    6. Finish and serve
      Remove the slice from the freezer and cut into bars. Top with melted chocolate and chopped freeze-dried strawberries. Return to the freezer until set, then enjoy.

    Notes

    • Storage: Keep in an airtight container in the freezer for up to 4 weeks.
    • Nut-free swap: Replace cashews with sunflower seeds and peanut butter with tahini or sunflower seed butter.
    • Topping variations: Swap freeze-dried strawberries for raspberries, or add a pinch of sea salt flakes over the chocolate for a salted caramel finish.
