    Refined Sugar Free Vanilla Frittata

    Gut Smarter

    Gluten-free | Refined sugar-free | Serves 6 

    Ingredients:

    • 5 organic eggs 
    • ¼ cup + 1 tbsp cottage cheese 
    • 2 heaped tbsp French Vanilla Supergut Protein 
    • Dash of maple syrup 
    • ½ tsp vanilla essence 
    • Dash of cinnamon 
    • ¼ tsp salt 
    • 1 cup berries of choice (we used strawberries, blueberries and raspberries)

    Method: 

    1. Preheat your oven to 180 degrees Celsius and grease a baking dish with coconut oil or butter. Set aside. 
    2. To a blender or food processor, add the eggs, cottage cheese, protein, maple syrup, vanilla, cinnamon and salt. Blend until smooth and light in colour. 
    3. To the baking dish add half of the berries, and pour the egg mixture on top. Top with the remaining berries and bake for 20 minutes or until golden, firm to the touch and starting to lift at the edges. 
    4. Once cooked, cool for 10 minutes. Then slice and plate with some Greek yoghurt, more berries if desired and a drizzle of maple syrup. Dig in and enjoy! 

    Notes:

    • These are great for meal prep, just simply store them in an airtight container in the fridge for up to 4 days.
