Unlike conventional marshmallows loaded with corn syrup and cheap preservatives, our recipe contains zero added sugar or corn syrup. Once set, these soft pillows are coated in silky 70% dark chocolate and topped with crushed strawberries for the perfect berry–chocolate finish.

Ingredients - Marshmallow base:
- 1 cup water, divided
- 3 tbsp Pure Gelatin
- 3 scoops Collagen Restore
- 1 cup organic honey
- 1 tbsp organic vanilla extract
- 1–1½ cups freeze-dried strawberries, crushed into powder
- 1 tbsp arrowroot powder (optional for dusting)
Ingredients - Chocolate Coating:
- 250–300 g 70% dark chocolate
- Extra freeze-dried strawberries, crushed, for topping
Method:
- Pour ½ cup cold water into the bowl of a stand mixer.Sprinkle the gelatin evenly over top and let it bloom for 5–10 minutes.
2. Add the remaining ½ cup water and the honey to a saucepan.Bring to a boil, then reduce heat and let simmer for 5 minutes.
3. Begin mixing the bloomed gelatin on low speed. Slowly pour in the hot honey mixture. Add the vanilla, then increase to high speed and whip for 8–10 minutes, until thick, glossy, and white.
4. Fold in the crushed freeze-dried strawberry powder and Collagen Restore until fully incorporated and pink.
5. Quickly spread the marshmallow mixture into a parchment-lined baking dish. Let it set overnight at room temperature.
6. Cut into bars or squares. Dip each into melted 70% dark chocolate, then top with crushed freeze-dried strawberries.
7. Dust edges with arrowroot powder if you want a lighter finish or plan to store uncoated pieces.
