Gluten-Free Chicken & Zucchini Carbonara

This delicious take on chicken carbonara replaces wheat-based pasta (high in gluten), with zucchini. Ok, it’s not exactly like your favourite pasta, but, you may choose to get back on wheat-based pasta once your gut is back to its best.
Ingredients
- 2 chicken breasts, thinly sliced
- 2 bacon rashers, thinly sliced (optional)
- 1 large zucchini, grated
- 1/2 cup pouring cream
- 1/2 cup goat’s milk yoghurt
- 1 tbsp thyme, chopped
- 1 tbsp fresh parsley leaves, chopped
- Lemon wedges, to serve
Method
- Heat a large pan over high heat. Cook bacon for 2-3 minutes until golden.
- Add chicken breast and stir-fry until golden.
- Stir in cream, yogurt, and thyme. Simmer until chicken is just cooked through.
- Add zucchini, season with salt and pepper, and cook for 1 minute until heated through.
- Divide into two bowls, top with parsley, and serve immediately with lemon wedges.
