    Gluten-Free Chicken & Zucchini Carbonara

    This delicious take on chicken carbonara replaces wheat-based pasta (high in gluten), with zucchini. Ok, it’s not exactly like your favourite pasta, but, you may choose to get back on wheat-based pasta once your gut is back to its best.

    Ingredients
    • 2 chicken breasts, thinly sliced
    • 2 bacon rashers, thinly sliced (optional)
    • 1 large zucchini, grated
    • 1/2 cup pouring cream
    • 1/2 cup goat’s milk yoghurt
    • 1 tbsp thyme, chopped
    • 1 tbsp fresh parsley leaves, chopped
    • Lemon wedges, to serve

    Method
    1. Heat a large pan over high heat. Cook bacon for 2-3 minutes until golden.
    2. Add chicken breast and stir-fry until golden.
    3. Stir in cream, yogurt, and thyme. Simmer until chicken is just cooked through.
    4. Add zucchini, season with salt and pepper, and cook for 1 minute until heated through.
    5. Divide into two bowls, top with parsley, and serve immediately with lemon wedges.
